Preheat the oven to 325 degrees. Grease a 12-cup muffin tin.
In a large bowl, combine the flour, cinnamon, baking soda, baking powder and sugar.
In a small bowl, beat together the eggs, cooking oil and vanilla extract.
Add the wet ingredients to the flour mixture, stirring just to combine.
Stir in the mashed sweet potato.
Portion the batter into the muffin tin.
Bake until a toothpick comes out clean, about 25 – 30 minutes. Let cool on a rack.
