These delicious muffins are super moist and packed with nutrients!


  • 1 1/2 cups mashed sweet potato
  • 1 1/4 cups whole-wheat pastry flour
  • 1 teaspoon cinnamon
  • 1/2 teaspoon baking soda
  • 1/8 teaspoon baking powder
  • 1/3 cup sugar
  • 6 tablespoons cooking oil or melted butter
  • 2 eggs
  • 1/2 teaspoon vanilla extract


  • Preheat the oven to 325 degrees. Grease a 12-cup muffin tin.
  • In a large bowl, combine the flour, cinnamon, baking soda, baking powder and sugar.
  • In a small bowl, beat together the eggs, cooking oil and vanilla extract.
  • Add the wet ingredients to the flour mixture, stirring just to combine.
    Liquid Ingredients
  • Stir in the mashed sweet potato.
  • Portion the batter into the muffin tin.
  • Bake until a toothpick comes out clean, about 25 – 30 minutes. Let cool on a rack.


Yield: 12 muffins
