TURKEY TOMATILLO SOUP
The recipe for this delicious soup accommodates a wide variety of veggies. Make a large batch to freeze or feed a football crowd.
Ingredients
  • 1 tablespoon olive oil
  • 1 cup chopped onion
  • 2 garlic cloves chopped
  • 2 teaspoons ground cumin
  • 4 cups chopped vegetables (celery, carrot, green & red bell peppers, tomatoes, squash, zucchini, frozen corn, green beans, you get the picture)
  • 4 cups chicken stock or gravy
  • 2 cups chopped cooked turkey or chicken
  • 1 cup diced tomatillos
  • ¼ cup chopped chilies or jalapenos (more or less to taste, fresh or canned)
  • sea salt and fresh pepper to taste
  • Tortilla Chips and sour cream for serving
Instructions
  1. Gather your ingredients.
  2. Heat the oil in a large, heavy soup pot. Add the chopped onion and cook until it begins to sweat. Stir in the cumin.
  3. Stir in the chopped garlic, celery, carrot, and other chopped vegetables.
  4. Sauté the mixture for a few minutes and then stir in the chicken stock or gravy. Stir in the chopped, cooked turkey or chicken.
  5. Add the diced tomatillos and chopped jalapenos.
  6. Bring the mixture to a simmer and cook for 15 minutes. Taste the soup and correct the seasonings.
  7. To serve: Ladle soup into heated bowls. Top with a dollop of sour cream and add some tortilla chips.
