Maple Crème Anglaise Sauce
This velvety sauce is delicious on fruit, and sinful over chocolate.
Ingredients
  • ½ cup milk
  • ½ cup cream
  • 3 tablespoons Maine maple syrup
  • 3 egg yolks
Servings: cups sauce.
Instructions
  1. In a medium bowl, whisk together the egg yolks and Maine maple syrup.
  2. Heat the milk and cream in a saucepan over medium heat until hot, but not boiling. Whisk into the egg yolk mixture. Remove from heat. Strain through a sieve into a glass jar and store in the refrigerator.
  3. Return the mixture to the saucepan and cook over low heat, stirring constantly until thick. The mixture will coat a spoon.
  4. Remove from heat. Strain through a sieve into a glass jar and store in the refrigerator.
  5. Makes about 1 ½ cups sauce.
