Preheat the oven to 400 degrees. Melt one-tablespoon butter in a heavy cast iron skillet and grease the pan. Prepare the corn bread, adding the sugar, lemon zest and wild Maine blueberries. Spoon into the pan and bake until a toothpick comes out clean, about 15 – 20 minutes. Carefully remove from pan and cut into wedges. Makes eight generous servings.
* You can make your own cornbread with 2 cups finely ground corn, 3 tablespoons baking powder, ½ teaspoon salt, 2 tablespoons sugar, 3 tablespoons melted butter, 1 egg, and 1-cup milk.
