Creamed Mushrooms with Chives
  • 4 tablespoons unsalted butter
  • 1 pound mushrooms, trimmed and quartered
  • 1 small onion, chopped (about 1/4 cup)
  • 1/4 cup heavy cream
  • 1/4 cup chicken or vegetable stock
  • 2 teaspoons fresh lemon juice
  • 2 tablespoons chopped fresh chives
  1. In a large heavy skillet melt the butter and sauté the mushrooms until the liquid they give off has evaporated and the mushrooms are browned, about 5 to 10 minutes. Stir in the onions and sauté until soft, about 5 minutes. Add the cream, chicken or vegetable stock, and lemon juice and simmer until slightly thickened, about 15 minutes. Stir in the chives.
  2. Add salt and freshly ground pepper to taste
