CLASSIC AIOLI
This traditional French garlic mayonnaise is easy to prepare and keeps well in the refrigerator.
Ingredients
  • 1 egg yolk
  • 1 tablespoon lemon juice
  • 1 teaspoon grainy mustard
  • 1/3 cup olive oil
  • 2 garlic cloves, finely chopped
  • sea salt and fresh pepper to taste
Instructions
  1. In a small bowl, whisk together egg yolk, lemon juice and mustard. Slowly add the oil and whisk until thick. Add the garlic and season to taste with sea salt fresh pepper. Makes about ½ cup.
