Smoothing out a very rough winter

Like most Mainers, we’ve been snowed in here quite a bit this winter.   Shoveling and plowing sure work up one’s appetite, and most days we’re in need of a mid-morning repast. My ideal snack is something that satisfies my sweet tooth, quick and easy to prepare, and has enough protein to tide me over til lunch.

The idyllic vision of a cup of coffee and an old fashioned donut enjoyed next to the wood stove, although quite delicious, isn’t ideal for the human body. The sugar and caffeine both crank up the metabolism, but much too quickly. Eating foods like donuts, muffins and bagels have high glycemic effects (elevate blood sugar too quickly) and don’t provide a lasting feeling of fullness. Research has even shown this high glycemic effect may also contribute to the development of diabetes and other chronic diseases.

The recipe for Maine Fruit Smoothies is really simple; a cup each of Maine wild blueberries, applesauce, and yogurt mixed in a blender. This quantity makes for 2 servings, but you can adjust the amounts easily.   The smoothie provides one with 2 servings of fruit, which in the winter, is often hard to come by, and 5 grams protein.

Of course, there is lots of opportunity for adventuresome eaters. Applesauce, a pantry item here, is often replaced with banana. To provide the nice, icy part, practically any frozen fruit (or veggie) would work. Think frozen strawberries, raspberries, or peaches. Or spinach or kale. Flavored yogurts are good too, but read the labels and steer clear of those that are more sugar and flavorings than real food.

What started in the 1970’s and ‘80s as a health food craze, is now hitting mainstream.   Driven by the consumers thirst for smoothies, sales of frozen fruit are up 67% since 2010, (almost $1 billion).   This is good news; I’d much rather Americans run on fruits and veggies, than donuts and coffee.

Frozen wild Maine blueberries act as the “ice” in this delicious and nutritious smoothie.
Servings 2

Ingredients
  

  • 1 cup frozen Maine wild blueberries
  • 1 cup Apple Sauce
  • 1 cup artisan Maine yogurt*

Instructions
 

  • Combine all ingredients in the bowl of your blender. Pour into 2 glasses and enjoy!
  • Makes 2 servings.

Notes

*I like Quill’s End Farm vanilla yogurt. Try with Organic Maine Liberty Applesauce.
